@chai2,
Ive lived on tocino when I briefly lived along the Sierras when we were doing mining development. Since then, I think its changed somewhat, Its more like some hunk of Oscar Myer baloney now. It usd to be like Pancetta (you could eat it raw), but it was best all crispwd up and served with chili pepper scrambly eggs. I havent been in Mexico for about 5 years so maybe things have come back to the old days

@farmerman,
ACtually some of the best moked bacon comes from these local brands sold at (of all places) WAL MART. Id go and look for the smoke cured maple or honey THICK SLAB CUT. Its just like pancetta I remember

I would just like a normal, healthy 'Merican breakfast. Four or five eggs over easy, crisp bacon, sausage links, sausage gravy, a ham steak, about a half pound chopped steak patty, with a side of corned beef hash and a small orange juice. Oh, and about a half gallon of strong Columbian coffee.

@Setanta,
Just a small repast before second breakfast and elevenses, huh?

@chai2,
That's right . . . for second breakfast, just a few sausage patty sammiches would do. For elevenses, some swordfish steaks and some poached eggs would do.

Honest to Dog, Louis XVI, the one what got his head cut off, was known to have a dozen eggs, two pounds of ham and a magnum of champagne for breakfast.

bfast sausage patty on a bun with hashbrowns on the side
lotsa onions in the hashbrowns because that makes everything better
hot sauce and mustard on the sausage because that makes me giddy

need to get some yellow peppers to add to the next round of hashbrowns

and maybe some mushrooms to layer with the sausage

I only eat one mid-morning meal a day Monday through Thursday, so I can get a little carried away.

On a bed of butter lettuce, cilantro, 🌿 basil, and Swiss chard:
I put sautéed onions, mushrooms, Brussels, broccoli 🥦, eggs.

For dessert, I obliterated a sweet potato, sliver of ghee, 2t of 0% Fage. It is so creamy!!

Have to limit this or I’ll eat it every day. Delicious!!
