Ahh, Stradee, looking forward to your version of bruschetta.

Mine is toasted Italian bread with a tomato slice, mozzarella cheese topped with a leaf of fresh basil and dribbled with olive oil......Mmmmm

Vienna's favorite cut of meat dish - the Wiener Schnitzel =
Slice of pork or veal - gently pound it to about 1/8 inch thick - press it into flour - dip it in beaten eggs - press firmly in bread crumbs and cook in lightly greased skillet. It does not take long because it is so thin. When nicely browned on both sides - Enjoy!!!!!

The pounding to the correct thickness takes practice Very Happy Very Happy

Dan, our recipes are almost the same!

Stradee's rendition of Bruchetta

1 cup thinly sliced onion
1/ c chopped seeded tomatoe
2 tbls capers
1/4 tsp black pepper
3 cloves garlic, finely chopped
1 tsp olive oil
4 slices French bread
1/2 c shredded reduced-fat Monterey Jack cheese

Spray large skillet with nonstick cooking spray
Heat over medium heat until hot
Add onion
Cook and stir 5 minutes
Stir in tomatoe, capers and pepper.
Cook 3 minutes

Preheat broiler
Combine garlic and oil in small bowl
Brush bread slices with mixture
Top with onion mixture, sprinkle with cheese
Broil 3 minutes or till cheese melts...

I get really tired somedays and do simple stuff - like last evening. Boil water, turn off heat, dump in instant rice wait five minutes.
While waiting, heat skillet, dump in frozen stir-fry, when heated serve rice in bowl with stir-fry over it. Season to taste. Not bad, but, not as good as other stuff that takes longer to cook. Shocked Very Happy

Dan and ehBeth,

My fav {when i don't have the time after work for fixing dinner} is a prime griller veggie burger with sweet relish, honey mustard,
mayo, tomatoes, onions - and a bakery fresh dutch crunch sandwich roll...and a wedge of cheese cake. So the dessert cancels out all the low cal ingredients of the veggies - but i don't care. Very Happy

Pesto Crostinis' very simple to fix, just a few minutes for a good appetizer - or late evening dinner.

1/4 loaf of french or wheat baguette
4 good size tomatoes
1 cup shredded mozzarella cheese
3 tablespoons prepared pesto sauce

Preheat oven to 400 degress.
Slice baguette {16 very thin diagonal slices}
Slice each tomatoe vertically {4 1/4 in. slices}

Place baquette slices on nonstick baking sheet
Top with 1 tble cheese than i slice tomatoe
Bake 8 minutes or until bread is lightly toasted and cheese is melted
Remove from oven and top each crostine with about 1/ tsp pesto sauce
Serve warm

You can purchase pesto in the frozen food section of the grocery store, or make from scratch - fresh chopped basil, pine nuts, garlic, and olive oil. There are variations to each recipe.

In Korea one of my favorite dishes was more of an hors d'oeuvre or appetizer that you could make a meal of - unfortunately, I don't remember the name of it. But, it consisted of large green leaves like lettuce on which you place a small -about three inch thinly sliced - piece of sirloin fresh from a small grill - shaped like a cone to drain the juice from the meat - then, add a sauce which tastes like it has soy sauce, minced onions, minced garlic, ginger and sesame in it and sometimes its warmed with pepper. On this may be placed other things like strips of white radish and maybe some kimchee. Then the leaf is rolled up and eaten by hand.

The Korean recipe sounds good and healthy! Innovative Pacific outdoor cooking.

My x mother in law, God rest her soul, was the worlds best cook {next to mom} she'd prepare an appetizer called pasteles {sp}. Similar to tamales - but cooked with banana leafs. There are many variations for pasteles - a traditional Puerto Rican dish. The mixture, if I can recall the ingredients correctly - pre cooked meat {pork, beef, or chicken} jalepeno's, garlic, recaito, onions, oregano, oil and puerto rican spices chosen for each recipe. Then place the mixture on the banana leafs, wrap in parchment paper, and secure with kitchen twine, then for cooking, she'd place the pasteles in a large stock pot of salted boiling water for an hour, then unwrap the pasteles and serve. She'd also prepare a traditional rice and bean recipe, veggies, salad, and for dessert - rice pudding. Many hours of preparation for her family meals, she was quite the neat lady.

My goodness, Stradee,

You have brought back memories from my childhood - and, that was a long time ago.

We lived on the tracks of the Texas and Pacific Railroad - literally. It was really a lot of fun - all my friends at all the schools I went to wanted to come to my house to play. The train engines were all steam and coal fed - the steam coursed through their arteries like our blood, they were alive. And, the whole scene and sounds was exciting. Here is a pic of my brothers and me (the little one on the right) - but you can't see the entire car we lived in - which was the one behind us - X-58....... Very Happy

It really was a rewarding time in my life - - - and, a time I appreciate.

Oh, and a P.S. = Now, I am the tallest and my oldest brother - the tallest in the pic is the smallest....... I always just say I had to grow to be the biggest to protect myself...... But, that's just for fun - we are and have always been protective of each other and friends.

Dan, that is a very cool photo!

Conversations with my eldest sister brings laughter and many good memories of our growing years - family gatherings - bike treks through the city with good friends and neighbor kids, great vacations with our families and their friends. Fortunate to have met such terrific people.
