My goodness, yesterday the weather was terrible in the USA from coast to coast. The global warming is really beginning to hurt.

Saving rain forest could slow all the bad weather down.

Rain, mild temps, thunder, no lightening yet - Spring/Autumn weather.

The sky and cloud formations were quite amazing today also.

Can only guess how global warming will affect Sierra winter.

We had a fun afternoon/evening here in Toronto. Set and I joined one of my co-workers, her husband and their collective four kids for an adventure - empanadas in Kensington Market, then a couple of hours at the Gardiner Museum of the Ceramic Arts, and then a wander through the Annex (university/arts neighbourhood) before a great meal at the Noodle Bowl.

Great fun with friends.

Dan, abandon! Never Shocked Very Happy

Was so busy last week, computer rested two days. Odd working hours then home, kittens, etc. First time i'd missed clicking for ages.

Political e mails though - zillions. Funneling through all the important issues - dang! Next day home from work, spent hours reading, sending letters, returning telephone calls....and today - just enough time for clicking, then errands and a daughter check in call. Smile

Visiting dauther for Thanksgiving - her homes' remodel almost completed and we'll be preparing dinner in a brand new kitchen! Italian heaven!

My Patti is half Italian and we both love Italian food - - - I cook a lot lately, because of Patti's MS. I have learned a lot in the past two, or three years, about cooking Italian style..... I really like to experiment with different combinations and spices..... Very Happy

I also was married to an Austrian lady from Vienna for almost twenty years. Her mother - was the most amazing cook in the world - I watched her prepare stuff and cook it - then she lead me to cooking in the Viennese style.

I also have spent many years in Asia - as a result my very favorite Asian serving is Korean. At least South Korean. Probably the North Korean food is the same - I don't know, because I have never been there.

How great you prepare all of your and Patties meals, Dan!

At our store, produce sells mostly all organic veggies. My fav way of cooking is stir fry - learned many recipes through the years - ethnic spices and oils, chinese cooking recipes, and traditional Italian spices.

I've retained from memory most of my family recipes - the elders just didn't write anything down on paper, instead perpared complicated dishes from memory. They made everything from scratch - pastas, sauces from fresh tomatoes and home grown spices - gnocchi, polenta, etc. I thank the food gods that Italy still trades with the United States and my moms dearest friend and an uncle are still with us. When my mom was still on the earth and could no longer prepare meals, I recall hours of laughter - mom and i attempting a 'memory' recipe.

In a speech to the Worldwide Fund for Nature at a gala dinner at Hampton Court Palace on Thursday, the Prince of Wales will argue that a tree makes a more valuable contribution to the planet standing in a forest than if chopped down to feed markets for cheap land and timber.

He is likely to cite figures from campaigners showing that deforestation is responsible for 18-25 per cent of global carbon emissions, an output second only to energy production. Around the world a forest area the size of Birmingham and Manchester combined is lost every day, resulting in an extra 22 million tonnes of CO2 entering the atmosphere. In aviation pollution terms, this is the equivalent of flying 37 million people from London to New York every day.

Andrew Mitchell, senior adviser to the Prince's Rainforests Project, which has raised £1m from 12 private sector companies, told The Observer: 'The Prince of Wales is trying to pull the best brains in the world together. The forests have huge value which we all use but don't pay for. They store gigantic amounts of carbon in their roots, trees and branches; twice as much carbon as there is in the atmosphere. The Amazon alone stores 67 billion tonnes of carbon.'

Charles has a long record of environmental campaigning and described the threat to the planet as 'the greatest challenge to face man'. His small farms and organic produce have attempted to lead by example, but he has been criticised for his carbon footprint generated by frequent flying and a fleet of cars.

A simple meal that I make is breast of chicken in Alfredo sauce. Really quick and tasty. Brown the breasts to retain the flavor - place in oven proof pot - pour Alfredo sauce over - add your own special spices - cover with lid - and, bake till done.

Mmmmmmmm good.

No, that was an example of a quick and easy meal - with Italian sauce.

Easy Italian - go to grocery - pick up Spaghetti sauce - seasoned to your liking or plain - saute chopped onions - just before they are glassy - add ground beef - when ground beef is brown pour the spaghetti sauce in the pot - add tomato paste, diced tomatoes, and spices to taste (I add Thyme, Basil, Oregano and garlic) plus a little salt and pepper (but not much)...... Let this cook on a medium/low heat for about an hour.

Then, fill a pot with water - bring to a boil - add your favorite pasta - when it sticks to the ceiling it's done....... Very Happy That's Italian...... Very Happy I time it at approx 12 minutes and test a bit.

When done - mix the two above ingredients and feast...... Very Happy

If you want - I make it all from scratch. It's just more time consuming. Cool

Here ya go, ehBeth. More easy Italian recipes. Very Happy

Quick and easy....gnocchi

Buy a package of gnocchi at the grocery store - from Italy
Buy a good Italian sauce at the store or...

Marinara sauce:

One large can Tomato sauce - or fresh organic tomatoes
Two cloves of garlic minced
One yellow onion minced
Rosemary, thyme, oregano, basil, sage, parsley, salt and pepper
Sliced mushrooms

In a skillet melt half a cube of butter or more
add garlic, onions, spices, and mushrooms
cook till tender
add tomatoe sauce and the same amount of water. If canned tomatoe sauce, just pour water in the can then pour the water into the sauce. Fresh tomatoes is a guess. Not to much, not to little water.

stir - cover and simmer for three hours or more - checking to see by stirring if you need more water if using fresh tomatoes. It's a good idea to stir the sauce during cooking time...wheather you use fresh tomaotoes or not.

Gnocchi:

A pot of boiling water
add gnocchi and boil gently
{directions are on the package}

Veggies in a bag...

Fresh brocchli and baby carrots
You can purchase an herb package at the store for veggies or...
Olive oil
Italian seasonings
salt and peper
apple cider vinegar
a bit of sugar
and a celophane bag with a twist tie

Place veggies in the bag
mix seasonings in a bowl then add to the veggies
close the bag
twist tie loosly
then puncture the bag near the tie {releases steam}
microwave on high for 5 minutes

Quick and easy green beans

Fresh cooked beans - cooled {or canned french cut beans}
In a bowl mix apple cider vinegar and a tsp of sugar
toss in the green beans - mix

To the kitchen.......... Very Happy

Dan, here's a variation for cooking chicken breasts...

Cast iron skillet
olive oil
Italian seasonings
garlic
s & p

Heat the skillet - drop in the chicken breasts w/ribs over seasonings {then add to taste herbs of choice}
cook slowly - turning the chicken often - don't cover the pan
then when done {almost burnt coloring} - pour a bit of white wine over the top of the chicken. The wine will evaporate - and just the ambiance of the beverage will lace the chicken.

If you have cast iron irons - place an oven safe plate over the chicken then place the irons on the plate.

Beef Ribs =

Place on rack in pan lined with foil to save drippings - bake in oven until almost done - cover with fresh minced garlic - when the garlic turns a beautiful brown to almost black - take out of the oven and enjoy. The drippings add to the flavor. But, also add to your cholestrol count. Ahhhhh the choices we have to make.

Oh, my Red cabbage =
we are now in the Austrian area of cooking.
Cut bacon in fine, small chunks - brown them - set them aside - cut onions, thinly slice red cabbage, deskin a green apple and cube it, add a small amount of vinegar, sugar and red wine - cook it all together with the bacon added later until the cabbage is soft. Mmmmmmmm good.
Meine Mutti taught me this.

She also taught me to make a nice gurkin (cucumber) salad =
Deskin the cucumber - very thinly slice it into a bowl - add salt - let stand for about thirty minutes to an hour - rinse the salt out of the cucumbers - set aside - in another bowl, add water - then add white vinegar until the taste is satisfactory - then add sugar to taste - when ok, pour this over the cucumbers and let them stay cool in the frig - over night is best, but, if you are in a hurry it's ok to have them right away......MMMMMmmmmmm Gooooood....... Very Happy
