It's minute writing (no 's') or just minutes...

Why do you want to do this?

The act of writing the minutes of a meeting is called "taking minutes".

I can think of

minute
memorandum (s) memoranda (pl) ("memos")
résumé (Curriculum Vitae in UK & Europe)
letter
report
balance sheet
proposals
reports
executive summary
instructions

Agendas
Fax cover sheets
Itineraries
News releases

Contrex mentioned balance sheets. If you want to include financial documents, I'd add income statements and profit and loss statements.

If you want to find the standard formats (in the United States) for setting up business documents, refer to the Gregg Reference Manual at www.gregg.com
