Hello, if you were talking to a woman from Spain and her farewell to you was "adios cari" I just don't know what cari means. I thought it might be an abbreviated form of cariño but I'm not sure, does anyone know?

Nearly right. Cari is short for caridad which means beloved one, or darling, or dear.

Caridad does mean charity. Cari is probably short for Carino (dear one).

As a mexican, 'cari' would be short for cariño (darling).

Caridad does mean charity. But it could be slang for southamericans and/or spaniards.
