"We hunted grasshoppers that leaped about like little rockets." What does this sentence mean? What does word "about" mean in this sentence?

Imagine many grasshoppers, One leaps toward you, one leaps away from you one leaps over there, another leaps a different way, this is what "about" meants in this sentence. Many grass hoppers leaping in all different directions at once.

In this context, "about" means "around" or maybe "all over the place." It's modifying "leap." "To leap about" is to leap repeatedly, in a generally random sort of way, all over the place.
