At the lavish table, top heavy with turkey, Bess said," I'll take light and dark both." How to understand "take light and dark." Thank you.

It's about the meat on a turkey. Light meat is the breast and the dark meat is the limbs and lower part of the body. Light meat has less fat; dark meat tends to be juicier. They finish cooking at different temperatures, too.
