Please help me analyse the component of Question :
"Stephen---he's the boy Eve is running off with."

If you just want to understand what the sentence means, then it means that Eve is leaving home (probably against her mother's and father's wishes) to be with Stephen.

If you actually want to have the sentence diagramed, you'll have to look elsewhere. I stopped diagraming sentences forty years ago, and don't intend to take it up again at this late date.
