Yes Rockhead, and it was good. You can get a general idea of the amounts the chef is using when he demonstrates, and tinker with it after.
I do not have a small ziploc tupperware of that sauce in my refrigerator.

I already miss anticipated new reports of his cooking adventures. Sad

Me. Dinner last night: penne tossed in a tuna sauce, which also included onion, garlic, green capsicum, tomatoes, capers, anchovies, parsley & a few other ingredients I can't recall off the top of my head). A quick, easy & tasty dinner on the run.

Thursday night pizzzzza. With mom's book club, my kiddos will have to fend for themselves. No there will be no eye-rollage at the possible green veggies adorning the food. There's a yay to pretty much everything . . .

last night - nothing really - I was still pretty full from a wonderful lunch - which wasn't big but somehow filling and just so tasty (one appetizer and two veggie sides) that I didn't want to taste anything less wonderful

I was having a problem with imageshack, everytime I would go to the site I would get pop-ups and I got spyware on my computer, so I don’t trust that site anymore. I just created an account on photobucket for my photos from now on.

Tonight will just be cheeseburgers and mac & cheese, it’s Antonio’s turn to decide dinner and that’s what he wants.

Great. I still use photobucket - they've been steady for me for years now.

When I first tried imageshack, they seemed very unattuned to people with macs, and I never tried it again.

Meat loaf and glazed carrots. We have ice cream for dessert... funny how the kiddos give glum looks for the carrot aspect of the meal but the idea of chocolate ice cream with sprinkles et al. gets nothing but grins!

Tuna sauce on pasta

Ingredients:

*250 300g spaghetti or fettuccine (I think penne would work petty well, too)

· 1-2 tbs olive oil (I used 2)

· 1 onion, quartered & sliced finely

· 2 (or more! ) cloves garlic

· 1 green pepper, sliced.

· 400g can chopped tomatoes in juice

· 1 tbs pesto or 1 tbs dried basil (I prefer fresh parsley, when there's no pesto sauce or fresh basil around (like in the middle of winter)

· 125g (or sightly bigger, it doesn’t matter) can tuna (drained of oil)

· Black pepper

· 1 tbs capers (optional)

· 3 " 4 anchovy fillets, chopped (optional)

· 10 " 12 green or black olives (or less, according to taste, perhaps sliced) (optional)



THEN:


· Boil the pasta, according to instructions on packet

· (while the pasta cooks) heat oil in a large frypan (or wok, if you don’t have one)

· Gently cook the onions & garlic, until the onions turn clear

· Add the green pepper. Continue to cook for 1 or 2 minutes

· Add the tomatoes & juice (if using whole tomatoes, break them into bite-sized pieces)

· Add the pesto or basil (or parsley). Stir in well

· Add the drained tuna. Break up any lumps, but don’t mash.

· Simmer gently till well heated, then season to taste.

· Add the remaining ingredients & gently heat through

· Pour sauce over the pasta or toss sauce with the cooked pasta.

· Eat! Smile

I found a recipe for Cacciatore Butter-Stuffed Chicken.

I made the stuffing for cooking and pounded the chicken. Put the stuffing in the freezer to chill then Antonio and I fell asleep on the sofa and by the time we woke up it was too late to make it so we’ll have it tomorrow.

We ran out and picked up some KFC.
