When referring to Boy or Girl Scouts in a list such as "chess, wrestling, scouts,etc." is the word scout capitalized?

No. In this usage, you're not referring to a specific organization.

But "Girl Scouts" and "Boy Scouts" are organizations and do take capitals... usually in a list likes gmitch mentions, the word would be "scouting" - uncapitalized.
