What psychological explanations are behind children's fairy tales like the pied piper? I'm not sure if its a psychological explanation, maybe it's something else I don't know but aren't there in depth analysis's of these stories? I remember reading that the original stories were more gruesome or something.
What about some freudian explanation for nightmares?

You asked, specifically, I believe, about the Pied Piper of Hamlin. It is generally thought that this particular tale originated with the Children's Crusade of the Middle Ages. It is a quite fanciful retelling of the story of a chraismatic Crusader who apperaed in Germany at the height of the Crusdaes and recruited children exclusively to come and fight what were then commonly caled Saracens (althought that's a misnomer, as you probably know. All the kids died on the way to the Holy Land, long before anybody reached Jerusalem. See Setanta for more details.
As to the brutality of the original stories, yes, the fairy tales of the brothers Grimm have been considerably sanitized in modern times. In the original Cinderella, for example, the evil stepsisters actuallt mutilate their own feet, chopping off toes with an axe, to make the prince's slipper fit. There is gore and corporal punishment aplenty. See dlowan for gore and corporal punishment.
