What do you guys call it in English when you refer to a kind of person who is an expert in hiding himself?

oh, and what word would you like to use to describe a person you think he/she is very sensitive to your needs and feelings and treat you very kindly

"compassionate" for the second.
A person who hides his true feelings might also be called "two faced" or "a phony".

This is known as an Osama Bin Laden.
I think "clandestine" would be a good word to describe the first person.
"Empathic" would work as well as "compassionate".
I would use the word "chameleon" for the first and "obsequious" for the second.
