tonyf, Welcome to a2k. I didn't know that any restaurant gives the wasabi root with a grater to customers. That's really the best way to evaluate the freshness.

Seems like horseradish is more popular here, at least it is with me....

I only had wasabi once, didn't think it tasted at all like horseradish, and didn't like it.

Whoa, that nasal rush horseradish can give you.

BTW - can anyone tell me how to keep horseradish biting? You buy a jar, open it, and a week later it's dead.

Most of the stuff sold in stores in a can have horseradish, but also includes mustard, cornstarch, and FD and C yellow No.5. Only the fresh root has the real punch.

c.i. - I get what the store has, usually Gold's, in a smallish jar. It doesn't list all kinds of filler, and is basically just horseradish with vinegar(?) and beet juice if I get the red, but it's still a pretty iffy proposition even when first opened. I tried grating my own, but you really need goggles and a mask. How people do it and survive is beyond me.

Can you use powdered hot yellow mustard? That stuff usuall stays hot.

Just remembered; Harry's Hofbrau has some real good horseradish on each table with two different kinds of mustard. Now, they really burn through your nose; I love it!

I love horseradish!

A spoon full of horseradish in any vegetable soup tastes so
good. Or a veal cutlet spread with horseradish, dipped in breadcrumbs and fried in the pan......

I am hungry now!

seriously (HA, HA, HA !)., fromwhat i read inthe newspapers, canada is producing some rather choice stuff - is it the frosty air ?
eastern ontario has become well known for its outstanding production facilities - plenty of land - not too many people snooping around !
last year a "greenhouse" was found to be operating in a former brewery (i think it was labatt's !) in peterborough/ontario . the operators had rented the facility and according to the landlord paid their rent on time , all the time ! (they were model tenants !). hbg
