To map their movements and chart a course for the protection of great whites, one research team is getting up close and personal with the sea's top predator.
Does "map their movements" mean to plan on a map or just make a plan no matter they use a map or not. And what does "course" here mean for? A specially picked way to let the sharks to pass? Is that easy to do? Or I misunderstand it?
"Map their movements" means to make a map of the sharks' movements - their migration routes and so on.
To "chart a course" is a metaphor from sea navigation. Literally it means to work out how to reach one's destination (taking account of winds, currents, tides etc.) and mark this on a chart. It is used here figuratively to mean "work out a plan" for the protection of the sharks.
