Here's a classic.

Cut 2lb's of Velveeta into chunks and toss in crockpot. Turn on low and add 1 or two cans of Rotel spicy tomatoes. Stir to melt cheese and combine - serve with tortilla chips.

"Chili con queso".

Wow! I've picked up some butt kicking recipes from this thread. I have a good one for chicken, but I'll have to dig it out. When I do, I'll post it here.

Actually, I tend to use my crockpot more in the winter than in summer. Armed with these recipes, I'm looking forward to winter now. I'm definately stealing McKenzie's roast beef one and CJ's pulled pork idea. mmmmmm.....
