Explain what constitutes a healthy and balanced diet.
Explain why it is important to interact with clients when helping them to eat and drink.

Here's a good link. You can following the basic Food Pyramid guidelines...a certain number of servings per day from each food group. (Heads up: the pyramid will be rewritten sometime this year.)
If you're working in a nursing home, aren't a lot of the clients on specialized diets, though?
