I make my own mayo, no sugar, just egg yolk, lemon juice, seasoning, and a mix of canola and olive oil. It's damn easy, and a little goes a long way. There are so many variations too, rouille, chipotle, tartar (I prefer capers to pickles), and even 1000 Islands dressing.
Guess what happens when you don't eat enough fat? You spend half the day trying to pinch out a hard, angry turd.
