why is "server" a better term than "waiter" or "waitress"

Good question. Lately, I have sort of adopted 'server' as sounding more professional. That's just my personal opinion.

do you think it is more polite to call server not waiter or waitress in restaurants?

It isn't, waiter is the correct term, used gender neutrally, of course.
