I learnt to read the patterns the seagulls made and the encroaching smell of sea air, and could sense a heavy swell ahead of time.

--->I don't know the exact meaning of the patterns the seagulls made.
Is the word "patterns" the same meaning as the formation?

Not for formations in this case. The second items in the sentence imply ' a regular behavior pattern ' of seagulls indicating to the watcher that they are approaching the coast, or perhaps giving an indication of changing weather or sea conditions.
