Hello,
1) Do we day: "I practice guitare or the guitare"?

2) is this sentence correct: "I practiced guitare singe ever (meaning I have practiced for a long time, singe childhood)"?

You can use either one. However, the word is guitar (no "e" at the end), and you wanted "since," no "singe."
