This is a sentence from a dialogue between a couple. The husband has to go on a business travel, and his wife asks the question. I guess it means she wants to go with him, but what exactly does this sentence mean? what is the usage of fit somebody in on?Looking forward to your answers!

It means nothing as written. If it had said "Do you think you could fit me in on Wednesday?", she might have been sarcastically asking for an appointment in his precious schedule.
Alternatively, if you drop the "on," it might be a request to be included in the trip, which seems to fit the context. I'd say there was an error in the textbook.

Can you fit me in on the flight? would work, (in the UK anyway.) It is rather cumbersome, but people have been known to say it.

Yep. Or when making an appointment. "Can you fit me in on the 22nd?"
