Is this the proper way to hyphenate this sentence:
The man was described as Spanish, tall, having short-dark-curly hair.

Grammatically, that's not appropriate - not the place to hyphenate. Commas are what is needed.
"The man was described as being Spanish, tall, and having short, dark, curly hair. "
