The line in question is an ingredient line in a recipe.
Two questions -
What is the correct grammatical term for the 'not' phrase?
What should be the correct form of the line?
3 1/2 ounces bittersweet (not unsweetened) or semisweet chocolate
I think the form of the line should be:
3 1/2 ounces bittersweet chocolate, (not unsweetened), (or semisweet chocolate)

Nope.
This is correct:

Why?
Of the many types of chocolate, the recipe wants you to use two, either bittersweet or semisweet. The writer wants to make it clear that bittersweet chocolate is DIFFERENT from unsweetened chocolate and unsweetened chocolate is not to be used.
