Which of these two statements is more appropriate to use.

I am simple and responsible guy that loves Christ.

or

I am simple and responsible guy who loves Christ.

It is a non-restrictive clause.
The correct one:
I am a* simple and responsible guy who loves Christ.

As Myopic noted you need the article 'a' before simple.

You can use either that or who in your example.
