I recently was recruited to a college cross country team and the coach abhors all dairly. Apparently dairy is rather harsh on the digestive system and lacks in nutritional value. I don't completely avoid it, but I do try to limit it.

@Irishk,
manchego, feta, and ricotta are sheeps milk. I think several of the camembert/brie cheeses are also

@farmerman,
My favourite cheese is an aged sheep cheese from Monforte Dairy near Stratford, Ontario. It's called Toscano, and anyone who touches my Toscano had better be a very very very good friend.

@ehBeth,
I've not had the money and peaceful digestion line up together to try goat products yet.

I would love to see them become more mainstream.

(we will have goats again next spring. and better fences)

@Rockhead,
my problem with goat is that it tastes like, well, goat. It has a gamey taste that seeps into any of the cheeses made from goat milk.

Goat milk is less creamy nd more abundant than sheep (even from the milk breed sheep).

@ehBeth,
Ill have to look that up and see whether we can get it at our Central Market cheese guy.
(Lancaster' Pa Central Market is number 8 in the top 10 farmers market IN THE WORLD)

That was a multi source survey done by some international bunches of travel mags.

@farmerman,
I'll take your Central Market and raise you the St. Lawrence Market (about 4 blocks from where I'm sitting)

Cool

Definitely see if you can get any of the Monforte cheese. They're really quite extraordinary - Ruth's head cheesemaker is a lovely young Mennonite woman.

@ehBeth,
It is known that some dairy farms give cows hormones so they will produce more milk. All I am saying is if this is true, how do we know that by consuming this milk we are not also absorbing some of this chemical that is left over in the cows system? If the hormones get transfered through the cow and into the milk then people drink the milk these hormones could effect humans.

Is that so far fetched it is just not possible? That is why I said, if you want to become a cow, drink cow's milk.
