We ate a can, not boiled, well, I ate most of them as it was something new and we did not boil, not change the water. This was on Saturday and let's just say I have stayed close to home and the bathroom....
I can't help but wonder, how this thread, started after an awful episode with Lupini beans on the 10th of February 20o4, suddenly gets another response totally out of the blue ...
I mean, it lies dormant for ages & ages, then suddenly springs to live again!
No doubt about it, Lupini beans are an eternal source of fascination.

they are so easy to prepare, soak for twentyfour hours in water. I boil water then place the swollen beans in the boiling water for 1 to 2 minutes remove from the stove and put them in cold water to quite the cooking process (this makes for crisp beans). I then put them in a salt brine for 7 days and test for biterness after the 5th day. when sweet I Jar in quart jars of salt water and place in the refrigerator. I never eat the skin as it is not very didgesable. great snack of the medateraineen countries and very high in protine. remember this salt to ;your liking and dont over cook the bean keep it crisp to the chew, cookin only helps get rid of the bitter properties. LUPINI Beans
So I saw this great looking bean at a Middle Eastern market and bought them. Being a creative cook, I thought that you just soak them and voila, they will cook up like most beans right? WRONG, after soaking overnight and then changing the water, I boiled them for an eternity 2 hours, drained them and then put one in my mouth....You can hear the puckering sound I made as this extraordinarily bitter taste hit my brain...So off to the internet I went and was dismayed by all the comments...I DO LIKE A CHALLENGE, so I left them in a large pot of salted water in my kitchen for 5 days and changed the water and added about 1/2 tsp salt with every water change...When I was actually in the kitchen I changed the water every hour or so, otherwise it was at least a few times per day - with each water change, the beans lost some of their bitterness...
So today I am writing this comment with a small bowl of peeled and absolutely delicious chewy beans in front of me for lunch; they are doused with a good quality Olive Oil, S&P, plus parsley, chopped jalapeno and of course garlic. These would make a great small plate or appetizer. Would I cook them again? I think that I will view these little gems as the Italians do and cook them once or twice per year for an extra holiday treat, but they sure take some patience - Karen
