We cannot see air, but we can hear or feel its flow when there is a wind. Wind is air in motion.

After I've edited it (or corrected it):

We cannot see the air, but we can hear or feel its flow when there is a wind. Wind is the air in motion.

You simply made it into a compound sentence.
You can also add the last sentence to act as a phrase:

We cannot see the air, but we can hear or feel its flow when there is a wind, since wind is air in motion.

There's no need to add 'the' to 'air', Ori. You would see a 'the' when a specific reference is made.

We cannot see the air that surrounds us, ...
