They use MSG on pizzas? I never knew. I shall now have to axe Dominoes (our only chain pizzaria). We have no real good pizza joints around here. All the ones we have are run by Hispanic guys who want to load theoir sauces with cilantro. Ecccccchhhh

That's one of the things I had to sacrifice when I moved to a rural area. We don't have much of a selection of restaurants out here.
It's a trade off, we don't have a lot of other things either.

I do, however, have access to Ribeyes you can cut with a fork.

Apropos of nothing, this morning I had a breakfast biscuit with pastrami, swiss cheese, and egg. Sometimes, multiculturalism can be quite delicious.

I dont think its a big seller . Theres never a line to buytheir pizzas. The best we have is Dominoes and Im not a big fan of that. THere was an Italian Club "The Victor Immanuel League" up near REading Pa where they would serve big Sicilian pizzas for in restaurant eating. Wed go in there on Sundays years ago and wed all take off our shirts so as not to slop em up. (Girls was optional).

Thats where I learned the oncept of"wife beater tee shirts"

The italian males I ever knew more than slightly did not swear around me, but had delicious attributes nonetheless. I kid. One was a business owner in Florence who lived with the daughter of a friend. Elegant guy in both presentation and mind. Another is a sicilian import, with cautionary characteristics, she smiles.

Re efficiency. I've semi followed wood burning ovens online for a couple of decades. Designed one myself and was glad to have the couple divorce before it was built and tested, as they were team bitches (yes, yes, it passed all sorts of review). Have also looked at what ordinary italians have in their garden areas.
I just don't think efficiency is the point.

First off: I looove pizza.

Mom & Pop places are the best but late on Sunday night I order online from Papa Johns.Only thing that irks me is they started charging a delivery fee and they remind you that this doesn't cover the delivery guy's tip.
