@Nancy88,
BTW, I came across "Weeknight Chicken Meals" from the following context.

At the hospital, while Somer completes paperwork at the counter, Krishnan notices the muscular definition of her legs visible below her knee-length skirt. He feels a sudden urge to walk across the room, lift her hair and kiss the back of her neck. Instead, he crosses his legs and picks up a magazine. After a few minutes, she sits down next to him and peers over his shoulder.
“Good Housekeeping? I didn’t know you were looking for Weeknight Chicken Meals,” she says, noting the article at which he’s been staring.
He puts down the magazine. “I’m a bit distracted, I guess.”

There is no set locution "weeknight chicken meals." However, the magazine referred to, Good Housekeeping, is a magazine intended to appeal to women who are keeping house for themselves and a family. Therefore, it includes recipes for meals. Since Americans often have some form of meat with every meal (if they can afford it), it is reasonable to assume that one of the things one will find in the magazine are recipes for meals in which the main course will be a chicken dish. The woman is simply being ironic when she says she didn't know he would be interested in weeknight chicken meals. Once again, this is not a set locution.

@Setanta,
The Western meal , especially America, usually has meat as a main offering.This is Unlike many Asian countries where meat is served as a side dish or is used as a flavoring.
Chicken is a favorite meat for main dishes and there are thousands of recipes for serving various cuts of chicken (A chicken is divided nicely into parts and these p arts are sold separately and a "week night chicken meal" can be made up of chicken breasts or thighs or other parts, and these different recipes concentrate on preparing these various cuts in appetizaing presentations and a seriews of side dishes (like vegetables) are made to accompany the main dish.

A western style evening meal is called "dinner" or "supper" depending upon the region of the west. Various cultures vary their"most" important meal of the day from any one of two or three (morning meal called breakfast, mid day meal , called lunch or dinner , and finally, an evening meal called dinner or supper).

Don't miss that she is teasing him about reading a women's magazine.

In our house the three main meals are breakfast, dinner, and tea. And we are definitely in the "West", but not the wild West.

Weeknight Chicken Meals is the title of the article he is looking at in the magazine.

There is a bit of a convention that weeknight (work night) meals should be quicker and easier to prepare than weekend meals. So the article will have quick and easy chicken recipes for an evening meal to be prepared after work.

Here in Britain there is a product called "Chicken Tonight" which is a range of sauces in which the chicken may be cooked.
