Suppose we want to establish a school of medicine affiliated to New York A2K University (okay, we've established the university in the first place), Can we call the school as:
New York A2K University School of Medicine?
This title will be formalized and carved on marble at the entrance of the school.

It may be a tad wordy but it would be a valid name for a university's school of medicine.
New York University calls their own:
NYU School of Medicine

No not childish Its just a lot of words to say and print on letterhead. It takes up a lot of space in any advertising.
NYU is easy to say which makes it more appealing in advertising.

Many Americans generally prefer to speak shorthand whenever possible. But if they were talking about New York A2K University School of Medicine, that might be more difficult as there would be too difficult an acronym.
New York University School of Medicine wouldn't be considered childish. There would be plenty of people who would choose to use this name instead of the shorthand version. Both are acceptable.
