At noon, I’d arrived with cheesecake in hand. As I stood at the front desk in the
lobby, waiting for the receptionist to announce my arrival, a deliveryman handed her a
birthday bouquet. “Thanks!”she squealed. "Oh, I love giant yellow mums."

What are giant yellow mums?

Yes, but never give a bouquet of "Mums" to a French person, because in France they are usually used as funereal flowers.

At one time, in written UK English, (I don't know about US English) such a shortened word might have been written with an initial apostrophe thus: 'mums. Others included 'bus (omnibus) and 'plane (aeroplane or airplane).
