For me slovak is easy to learn.
I think that out of the languages that I've learned from immersion, Russian was the easiest.
Of course immersion is the best way to actually learn a language, but I say this as I found Russian really easy to get used to from hearing it compared to others that I've been immersed in. It seems to flow so nicely and it just started making sense a lot quicker to me than some other languages.
From studying a language on my own or in a class...I guess the romance languages aren't so bad with English being my native language. Italian and Spanish especially.
Another noteworthy non-romance language is Turkish. The grammar is a piece of cake, and the words are easy to say.
