If you live anywhere near the Dallas area, there is a fabulous yeast roll served at Bubba's (also very strong yeast taste). These rolls are the best I have ever had and I have been trying to find the recipe as well. They almost taste like they have beer in them, but evidently they don't. Guess that is the 'malt/barley' flavor you mentioned. Bubba's is located across the street from SMU on Hillcrest in Dallas.
