Here is my sentence:
My professional activity began in 2009 in XYZ. As I was developing my BSc dissertation at the time, I considered it would make sense doing so on “The Challenges of XYZ”.

Is this grammatically correct? Does the doing so make sense in this sentence?

It seems unwieldy, what about

Anyway just for knowledge, can the "doing so" be used like that?

Yes. "Do so" is a pro-verb (like a pronoun, but with a verb), so it can be used so long as there is a clear antecedent.
