rank = in order of size or importance
seamounts = undersea mountains
which = is usually preceeded by a comma

Seamounts are underwater mountains.
So if you say "...the prevalence of seamounts, which are treasure troves...." the "which" refers to the seamounts -- the seamounts are a treasure trove of biodiversity.
Rank means where on a list it would fall if you were to put things in some order -- say from most common to least common sea habitats. Seamounts are very common so they would
rank very high on your list.
