Please look at this English text...

In his best-selling book The Omnivore's Dilemma, which social critics see as yet another piece of evidence to support their thesis of a burgeoning interest in natural food among Americans, Michael Pollan elucidates industrial farming, explains organic farming, and discusses hunting and gathering food for oneself.

very hard to understand....it seems there is some history attached with this text which I'm not aware of . ....this seems not just a literal wording ... .......Can you please explain the details why the author wrote this.

What is 'burgeoning interest' here ? Not getting the meaning here.
they said 'thesis of a burgeoning interest in natural food among Americans' ..... umm...is there any history attached to this text ?

'food for oneself' ---> is this correctly written ? seems not matching with the context.

What is 'burgeoning interest: Rapidly growing interest in natural food.

...gathering food for oneself. Rather than purchasing ready to eat meals or dining in restaurants americans are becoming interested in some cases in gardening, growing their own food, purchasing direct from farmers, in some cases hunting their own food.
