This is relating to audio and acoustics. If using words such as "change to neutral", "make neutral" or "smooth out" to describe a system for correcting acoustical anomalies, would the Latin "verto ad quietus" be grammatically correct?

No, it is not grammatically correct.

Verto is first person indicative ("I turn"). I think you want the
imperative, verte ("Turn").

Quietus is the nominative masculine. Since it is the object of the
preposition ad, you want the accusative, quietum.
