@Butrflynet,
That's a good link, Butrflynet! Thanks.

I found this:

I soaked and cooked some dry beans that I had left in the pantry, but they didn't soften after cooking. Why?

Always use fresh dry beans if possible. Beans that have been stored for over 12 months or in unfavorable conditions may never soften.

Hard water may also cause hard beans. If the cooked beans still seem tough, add a 1/4 teaspoon sodium bicarbonate (baking soda) for each pound of beans to increase tenderness. While adding baking soda is an old trick, remember that the ingredient also may over-soften fresher dry beans, causing mushiness.

Add acidic foods, such as tomatoes, vinegar, lemon or calcium-rich molasses, near the end of the cooking time, because these ingredients may toughen the skins.

Add salt just before serving to avoid toughening the beans skins.

I added some canned tomatoes. Maybe that's my problem.

Anyway, I'm going to give the beans one last chance and if they don't behave they'll have to go.

So, boomerang, did they behave or did they go?

Curious to know.

@msolga,
They behaved. We're having them for dinner tonight.

I did add some baking soda -- I don't know if that's what made the difference but they turned out pretty good. The flavor is great and the beans are just about right but honestly, I think I probably cooked these beans for 24 hours, over the course of 4 days. It almost seems more like a science experiment than dinner at this point.

Hooray! Well done! (Don't you just hate waste?)

Yes, I've heard of using baking soda for this purpose, too. During the soaking process. I'd be interested to hear what others might have to say on this, too.

I really have to admire your dogged determination, boomerang! Wink

@dlowan,
But I also remember, as word from beyond, that those who get used to beans get used to them. I admit that I both eat a lot of beans and fart sometimes, but, sorry to say, it doesn't seem extraordinary... perhaps I'm blase. I suspect people can differ on all this with their own physiology..
