There is a cafe in Corrales we like to frequent for breakfast but the last time we were there I noticed that the menu did not list any breakfast with frijoles. I complained to the owner that no self-respecting cafe in New Mexico would serve breakfast wtihout frijoles. This morning the Lady Diane, the Lady Osso, our friends Carol and Ann went there for brekkies (the ladies were then to proceed to The Lavender Festival while the Dys returned to try to finish a project in the garden) The Lady Carol ordered huevos rancheros while I settled for quesadilla con huevos. Her plate came with frijoles. I'm thinking that sometimes cafe owners actually listen to customers.
You can spot the texans in New Mexico by the fact they order Red chili instead of Chili Verde. No self-respecting new mexican would ever order red chili.
You are right about that.
Chili verde made with Hatch chilies. Doesn't get better than that. Yummm.

Well, of course I am, I am The Dys. (You're welcome to have a bowl of chili verde at my house anytime Edgar). No lone star but I will have Dos XX's.
Can't make a decent Frito pie without red chilis.
And the lavender festival was delightful. That's when the Dys backed out.

Do the Indians have mole in New Mexico? I'm an interior Mexican food kind of guy.
Mmmm.... Ceviche....
