What is the proper word to use in the the above example. I believe interest should be singular, but do not have a rule to apply to it. Does anyone know for sure?

Thanks!

It depends not on the fact that children is plural but on whether the interest is one or many and then whether that is a distinction you care to make.

Now collocation would dictate that interest be used. But only because the phrase is traditionally used with the singular interest.
