Ring! Ring! Ring! the bell rang for recess.

1. Should 'the' be capitalised?

2. I believe 'recess' is American English. Can I substitute 'break' for 'recess''?

1. Yes. An exclamation mark (or "exclamation point" in AmE) ends a sentence, as do a question mark and full stop ("period").

2. Yes you can, especially for non-AmE readers.
