The culinary camps have become so balkanized that some factions consider interdietary dating taboo.

What part of speech of taboo in the above sentence?

Thanks in advance!

Adjective.

Dating here is not a verb, but a gerund (acting as a noun.) So I think it's an adjective describing the noun.
