There are many variations on the traditional type. Bakeries in particular can produce huge lamingtons, sometimes composed of more than one layer and filled in the center with whipped cream. Chocolate ganache can be substituted for the simpler chocolate glaze if you want the result to be very rich.

Actually, though, if you’re using stale cake, you should skip the ganache. The more watery chocolate glaze helps the cake to revive a bit, and will usually produce a better tasting lamington than does the ganache, which is much more fatty. You can find ways to alter the basic recipe at home, perhaps adding fruit between a layered lamington, or varying the type of filling of a lamington sandwich cake. You’ll find numerous recipes online particularly if you visit Australian or New Zealand based cooking sites.


You’ll have a hard time finding Lamingtons outside of Australia or New Zealand. Most people make their own, and if they want to speed up the process, they simply buy vanilla sponge cake. They also buy lamingtons made by local bakeries or in grocery stores, but a grocer in the US would likely wonder what you were talking about if you request these cakes. Given that the cakes are already stale, they probably wouldn’t survive much of a trip, unless flown by air overnight. You can however, buy lamington cake mix, though any recipe for yellow or white sponge cake will do.

i've wanted to try a real Lammington ever since i saw Margaret on Mother and Son make them (Esme Watson made them on A Country Practice as well, if i'm not mistaken)

Hi hamburgboy and djjd. I think the proper name is "Lamington" although on the packet in my kitchen it is spelt with double "M". Read all about it here http://www.aussie-info.com/identity/food/lamington.php

Big day, very busy.

Was good to be back at work though very tiring. Saw the most beautiful sunrise, the fields were jack frosted and everywhere was speckled white, almost silver, and this huge sun just came up over the moors - massive red sky - stunning. Good start to the day.

Didn't have a meeting re absence, too busy, Head is too stressed (she's on the verge of resigning, too much pressure - way too much), so, knuckled down, did my job, did it well Razz and... see what happens tomorrow.

It was good, very good.

And tonight, we went to hear Messiah since one of out friends was singing in it. Not the only reason, of course.

And know what? I was damn near blubbing like a baby. Blinking hard, and breathing deeply. The big tunes just crack me up. I don't know quite why....memories of childhood, maybe. Or maybe just that music reaches the parts other things don't.

I am sorry TC. Retail is hard...especially this time of year. I almost feel like I need to take little gifts to the people that help me at Christmas at the retail stores. I went with my mom this past Saturday and the woman that helped us was so nice...but I could tell she was a wee bit frazzled.

Visiting my brother and wife today, both suddenly lost the sight of one eye simultaneously, have both been operated on in the hospital near me and hopefully had their sight restored. Time will tell.

On a brighter note, my three grand kids will be visiting me in the next week or so for a 7 day stay, it will be bedlam but that's the fun, haven't seen them since August.

Off to have some breakfast, cheers.

Izzie - you amaze me....how many times can I say that?

I am dense to be sure. These days I can't even remember certain words!

'Twill be fine Izzie, love. We are doing a day at a time and happily at that. Have moments of "Holy Cow's" but as a whole are very positive about the future. My faith is strong - but it's not because I have it - I seem to be granted it in doses...this is a happy thing to be sure!

I haven't told you all, but the Prof. said he did not mind my sharing that he has been laid off. He has been working in a warehouse for a friend and sending off resume's like crazy. We have two interviews already - so we are feeling fairly positive about the future. The problem is the economy is still pretty shaky and his position can be acquired for a lot less these days. We will probably be pretty tight for a few years...but that is a blessing.

We have certainly learned not to take a good job for granted - or money for that matter. Thank goodness we did not use our savings for home improvements like I have longed to do for so long! That is just "stuff" and feeling secure and being able to have a "normal" Christmas is quite a merry thing! The savings, my job and picking up a couple of substitute days each week and his working at the warehouse and even picking up a paper route has made this the best scenario it could possibly be, given the circumstances. My hope is that we will be in a job by the new year...

I am using that "royal we" and "quotes" a lot. Can't stop myself for some reason.

Anyway...one day at a time. We will get there. Thanks Izzie.

Hey there Dutchy - what an odd thing...both losing their eyesight in the same eye at the same time. I hope the surgery is successful and they get it back quickly. Enjoy those grandbabies. My mom and dad just got to see the boys for the first time since August. That is just too long isn't it?
