Is the sentence correct?

Either:

How many subjects does one have to take in XYZ exam?

or

How many subjects has one to take in XYZ exam?

The first sentence would be more common in American English.

As Wy pointed out, it would be more common to use the word "does" in the question. While it may be technically correct to not include "does", it might leave some US readers confused if you don't include it.

(I have to take NNN subjects)

How many subjects have we to take in XYZ exam?

(We have to take NNN subjects)

How many subjects has a pupil to take in XYZ exam?

(A pupil has to take NNN subjects in XYZ exam)
