This was a pivotal scene in the movie. When the counterman tells the customer (a boxer--the two-legged kind) that he has to pay for the soda, it's a metaphor suggesting that when you do something wrong, you have to suffer the consequences--pay for your actions.
C'mon guys. How many leading men are in the food/wine business?

A leading man from the 1950s would have to be at least in his 70s now. I remember Marlon Brando was a boxer in On the Waterfront, but I do not recall him having anything to do with wine...
