Have any of you ever used a cake mix to make chocolate chip cookies?


I did today for the first time, and they are gooooooooooood!


Here's the recipe:
1 box cake mix (yellow)
1 large egg
1/4 cup water
1/4 cup oil
1 bag of choc. chips

Mix together and spoon out, bake at 350 till done.




I'm thinking......

Lemon Cake Mix w/powered sugar icing
Butter Pecan Mix w/ Cream Cheese icing
Strawberry Mix w/ whipped topping

You could make any flavor.......plain or festive....

Here's a recipe I came across that has more chocolate than flour. For chocolate lovers only.

Black Gold

6 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup semisweet chocolate cut into pieces
1/3 cup unsweetened chocolate cut into pieces
6 tablespoons unsalted butter
2 large eggs
1/2 cup sugar
2 teaspoons vanilla extract
2/3 cup semisweet chocolate pieces

Preheat oven to 325 degrees.

In a sifter combine flour, baking powder and salt. Sift unto a large piece of wax paper and set aside.

Heat 1 inch of water in the bottom half of a double boiler over medium heat. With heat on place one cup of semisweet chocolate, the unsweetened chocolate and butter in the top half of the double boiler. Use a rubber spatula to stir the chocolate and butter mixture until completely smooth.

Place eggs, sugar and vanilla extract in the bowl of an electric mixer fitted with a paddle. Beat on medium for 4 minutes until soft. Use a rubber spatula to scrape down the sides and beat for 2 more minutes. Stop the mixer and add the chocolate mixture. Beat on medium for 1 minute until incorporated. Scrape down the bowl. Add the sifted dry ingredients and 2/3-cup semisweet chocolate. Mix on low for about 30 seconds. Remove the bowl and use the rubble spatula to finish mixing the dough until thoroughly combined.

Using a heaping teaspoon for each cookie place 12 cookies on an insulated nonstick cookie sheet. Place two cookie sheets in the oven, one on the top rack and the other on the middle rack. Bake for 4 1/2 to 5 minutes then rotate cookie sheets from top to center and center to top. Cook another 4 1/2 to 5 minutes. Remove from oven and allow to cool for 30 minutes.

Store the cookies in a tightly sealed container.

I've seen variations where you can add walnuts and/or espresso.

Not exactly ripples shakin' the foundation of the cookie world, but damn I was impressed with myself.

I am not a cookie maker in anyway, shape or form when it comes to mixing cookies up and have them actually turn out to be a "cookie."

I get fluffy cookies, crumbly cookies, half baked cookies, so I'd just about given up.

Then I found this recipe, tried it, and BAM! I'm chef Emeril...lol Well, (cough cough) I was close to Emeril before I made these cookies, but just not in the baking department.

I do pretty good with cookies, it's the fudge I fudge up Shocked

Montana, if you just want fudge, nothing fancy....here's a neat trick.

I don't measure, I go more by taste than anything.

Melt on stick of butter in a big sauce pan.
Add cocoa.... (probably 1/2 cup or more)

Stir it up with a whisk really good....you can even take it off the heat at this point if you want too.

Then I add pet milk......probably 2 or 3 tbs.

Whisk again....really good....

Then start pouring the powdered sugar to it a little at a time. Keep whisking, and pour some more...till it gets thick.

Spray a dish with pam...stick it in the fridge till it sets and poof...you got fudge.....
