Can 'either' be used of three items? You can have either apples, oranges or grapes.

Yes it can, but the correct sentence would read, "Can 'either' be used for three items."

Also, either works with or, like neither works with nor.

Like this: You can have either an apple, or an orange, but you can have neither a grapefruit, nor a rasberry.
