Should it be 'We would like ...'? I think so. Am I right?

"like to think" is an expression. It suggests something the speaker chooses to believe. It has nothing to do with enjoying the act of thinking. You don't use "would," because it's the present tense.
I like to think that all our customers are satisfied because we give good service.
I like to think that there will be peace in the world in my lifetime.

BTW, "would like to think" has an entirely different connotation. It suggests that things are not the way you would like them to be.
I would like to think that all our customers are satisfied because we give good service, but I think it's probably because our prices are lower.
I would like to think that there will be peace in the world in my lifetime, but I'm more inclined to believe that there will never be peace in the world.
