A wok is used by the Chinese for fryng. What do we call the utensil that is used to turn the food that we are frying?

The implement might be metal tongs, most often made of aluminum. I think the most "authentic" implement would be wooden tongs, though these are not usually found in Western kitchens.

Come to think of it, probably wooden chopsticks would be even more authentic than wooden tongs. (By "authentic" I'm referring to the implements commonly or most likely to be used by the Chinese themselves.)
