1. We were surprised by his friendly invitation considering he had not talked to us much since we'd met.

2. We were surprised by his friendly invitation considering he had not talked to us much since we met.

Are both sentences fine and, if so, what is the difference in meaning?

Both sentences are okay, but the first one is unneccessarily complicated in my opinion. There is no real difference in meaning.

"Are both sentences fine?" is a technically correct, but not particularly graceful question.

"Are both sentences correct?" is a more authorative question.
